In the early 1990s, Dean's experimentation with jerky recipes led him to create the Original Jerky Cure & Seasoning, which became the cornerstone of what would later become Hi Mountain Seasonings. This product was based on his popular steak seasoning from his Riverton restaurant, The Broker. The business officially opened in 1991, named after Dean's love for mountains and cowboys.

After achieving local success, Hi Mountain Seasonings caught a big break when it was featured on the QVC shopping network, selling 1,200 HMS jerky boards and knives—a specialized set designed for making homemade jerky—in just four minutes. This exposure on QVC, a nationally recognized shopping network with millions of viewers, was a turning point that helped the company expand across the country and rapidly grow its customer base.

In 2003, Dean sold the company to Hans and Kimberly Hummel who continued to expand the brand. Since then, Hi Mountain Seasonings has grown its product line from just five jerky seasoning flavors to over 200 items, and the company's headquarters in Riverton has expanded from its original 12x24 office to 28,000 square feet of space spread across four buildings with two satellite facilities.
