Houston Safari Club Foundation (HSCF) is proud to welcome Justin Townsend, founder of Harvesting Nature and renowned wild food authority, and The Intrepid Eater, Adam Berkelmans to the latest episode of the Hunting Matters podcast.
Justin Townsend is a wild food expert, chef, and founder of Harvesting Nature, a leading outdoor media company inspiring people to hunt, fish, forage, and cook their own food from the wild. A member of the Choctaw Nation and native of Southeastern Oklahoma, Justin’s passion for the outdoors began with childhood fishing and cooking trips with his grandparents. With degrees in Anthropology and Geography (Food & Culture) from the University of New Orleans, Justin launched his culinary career under James Beard award-winner Chef Frank Brigtsen. His work has taken him from the Gulf Coast to the Florida Keys, where he served as Executive Chef at Mellow Café & Gastropub. Through Harvesting Nature, Justin has built a vibrant community through articles, podcasts, camps, and print media. He’s the author of the cookbook Eat Wild Game and host of the Wild Fish and Game Podcast, with over 180 episodes. His writing has appeared in MeatEater, Outdoor News, Backcountry Journal, and more. An advocate for conservation and outdoor access, Justin is active in Backcountry Hunters & Anglers and served on the national advisory board for BHA’s Armed Forces Initiative. He is also an active-duty member of the U.S. Coast Guard.
Adam Berkelmans, also known as The Intrepid Eater, is a passionate ambassador for wild food and a proponent of nose-to-tail eating. A Jack-of-all-trades, but master-of-none, he has spent a lifetime collecting knowledge and experiences, trying his hand at wilderness canoe guiding, whole animal butchery, hazard tree removal, riparian restoration, arborist work, organic vegetable farming, park operations, food blogging, recipe development, and education. Starting his brand, The Intrepid Eater, in 2020 as a response to the pandemic, he has since developed over 600 recipes, which can be found on his website, www.theintrepideater.com, and across hunting and outdoor media, both online and in print. With a heavy focus on wild foods, he derives inspiration for his recipes from international flavors and techniques and looks to make his plates pop with bright natural colors and flavors. He also works closely with Harvesting Nature, providing support as managing editor, podcast host, writer, cooking and butchery instructor, and recipe contributor. A Canadian, Adam spends his time between Ottawa and a cozy lake house north of Kingston, Ontario, with his partner Kathy and small münsterländer Arrow. When not cooking, he can be found hunting, fishing, foraging, gardening, reading, traveling, and discovering new ways to find and eat food.
