Canadian Bear Bacon Recipe

Ingredients:

1 Hi Mountain Buckboard Bacon Kit

1 Bear Roast

Brown Sugar

Maple Syrup (just enough to glaze all sides of the roast)

Instructions:

Follow the instructions in the kit to determine how much Bacon Cure to apply to the roast. The amount depends on the size of your roast. Place it in a non-metallic container and refrigerate. (The roast shown was cured for 6 days. After 4 days, brown sugar was applied to all sides of the roast and it was put back in the refrigerator. For a smaller roast, you would cure it for a couple of days less than a larger one.)

After the curing time, follow the instructions for rinsing and soaking the roast. Then air dry it as directed.

Set your smoker or pellet grill to 200 degrees and smoke until it reaches 165 degrees. When the roast hits about 145 degrees, glaze it with maple syrup and keep smoking until it reaches your preferred temperature.

Remove the bacon from the smoker and let the roast cool on a rack. You are now ready to cook some bacon. Slice to the thickness you like and fry up with some butter or saved bacon grease from regular bacon previously cooked. I prefer to use bacon grease to fry the bear bacon.
