Hi Mountain Seasonings Helps Hunters Celebrate the Dove Opener with A Flavorful Recipe

Hi Mountain Seasonings Smoked Dove Recipe

Ingredients:

  • 20+ dove breasts, bone-in
  • 1 packet Hi Mountain Seasonings Game Bird Brine
  • 1 brine bag
  • Hi Mountain Seasonings Trail Dust
  • Olive oil

Glaze:

  • 6 tbsp butter
  • 4 tbsp brown sugar

Directions:

  1. Mix Hi Mountain Seasonings Game Bird Brine with one gallon of ice water in a brine bag or non-porous container.
  2. Add cleaned dove breasts and refrigerate for 24 hours.
  3. Rinse in cold water, then soak in fresh water for 90 minutes, changing once.
  4. Air-dry dove breasts on an oven rack for one hour.
  5. Preheat smoker or pellet grill to 225°F.
  6. Coat dove breasts lightly with olive oil, season generously with Hi Mountain Trail Dust.
  7. Place the rack with the dove breasts on the smoker/grill.
  8. Melt the butter and stir in the brown sugar until it is dissolved. Keep the glaze warm.
  9. After one hour, baste the dove breasts with glaze.
