4-5 lbs. of bluefish fillets
1 pouch of Hi Mountain Seasonings Gourmet Fish Brine
1 Gallon of Ice Water
1 non-metallic container
HMS Gourmet Fish Seasoning*
HMS Trail Dust*
Pork Rub*
