Outdoor News and Hank Shaw Partner on "Taste of the Wild" Cooking Feature

Shaw suggested that many hunters often believe there's little to no meat on waterfowl legs, but says that's simply not true. "In some states you must keep the legs of large ducks and all geese or face charges of wanton waste. But it shouldn't take a law to make you want to eat the drumsticks of your waterfowl. They're incredibly rich in flavor, and aren't hard to cook," Shaw said.

Drawing on the expertise that Shaw infused into his cookbook, "Duck, Duck, Goose: Recipes and Techniques for Cooking Ducks and Geese," readers will find the instructions and tips useful towards maximizing the often overlooked legs of their waterfowl harvest.
